Smoked Haddock and Smoked Salmon Kedgeree
Delicious rice dish with smoked haddock, smoked salmon, boiled egg, cream, mild curry and a dash of mustard
Scotch Broth
warming vegetable and lamb soup
Seared scallop salad
King scallops set on a salad of mixed leaves, pear chunks and walnuts with a dressing of orange juice, balsamic vinegar and honey

Lamb 'Duchally'
Loin of lamb pan-fried with shallots, flamed in Duchally whisky, served with a cream and mushroom sauce and garnished with haggis and vegetables
Pheasant 'Bonnie Prince Charlie'
Sliced pheasant breast with a sauce of apples, cream and Drambuie, garnished with sliced apple, roasted flaked almonds and vegetables
Tay River Salmon Roulade
Thinly sliced salmon, spread with sole and crab mousse, rolled, poached and served with a lobster and brandy sauce, garnished with vegetables
